A local favourite in West Ryde, Tatsuya Sushi Bar, has been issued two separate penalty notices by the NSW Food Authority, resulting in fines totalling $1,760 for serious breaches of food safety regulations.
The establishment, located at 14 Anthony Road, West Ryde, was found to be non-compliant with the Food Standards Code, according to details released.
Specific Breaches Noted
- One penalty notice, amounting to $880, was issued due to the failure to implement a process step known to ensure the microbiological safety of food during preparation. This particular contravention was highlighted as occurring despite previous warnings issued to the business.
- A second notice, also for $880, cited Tatsuya Sushi Bar for failing to maintain its food premises to the required standard of cleanliness. This offence, too, followed prior warnings given to Jae Master Pty Ltd, the corporation operating the sushi bar.
Both alleged offences took place on April 24, 2025, with the penalty notices officially served by the City of Ryde on June 4, 2025. The public details of these penalties were first made available on July 29, 2025.
